Utilize those lingering veggies in your fridge with these fantastic chicken enchiladas. While our recipe features zucchini, squash, and onion, feel free to switch things up by incorporating spinach or potatoes for a delicious twist!
Ingredients
2 tablespoons canola oil
½ cups chopped zucchini
1 ½ cups chopped yellow squash
½ cup chopped yellow onion or white onion
1 teaspoon minced garlic
1 ½ cups shredded, cooked chicken breast (about 4 1/2 oz.)
½ cup shredded, cooked chicken thigh (about 1 1/2 oz.)
⅝ teaspoon salt
½ teaspoon black pepper
4 ounces Monterey Jack cheese, shredded (about 1 cup)
8 (6 inch) corn tortillas
Seasonings (cumin, chili powder, garlic powder, salt, and pepper)
½ cup bottled salsa verde
Fresh cilantro leaves
instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare Filling: In a skillet, heat a small amount of oil. Add the shredded chicken and any desired vegetables. Season with cumin, chili powder, garlic powder, salt, and pepper. Cook until the chicken is heated through and the vegetables are tender.
Assemble Enchiladas: Warm the tortillas briefly to make them pliable. Spoon a portion of the chicken mixture onto each tortilla and roll it up, placing them seam-side down in a baking dish.
Add Sauce: Pour enchilada sauce evenly over the rolled tortillas. Make sure they are well-coated.
Top with Cheese: Sprinkle the grated cheese over the top of the enchiladas.
Bake: Place the baking dish in the preheated oven and bake until the cheese is melted and bubbly, usually around 20-25 minutes.
Garnish (Optional): Once out of the oven, you can garnish the enchiladas with fresh cilantro, chopped green onions, or a dollop of sour cream.
Serve: Allow the enchiladas to cool for a few minutes before serving. Enjoy your homemade enchiladas with your favorite sides!
Feel free to customize the recipe based on your preferences, adding ingredients like beans or adjusting the spice level to suit your taste.
